We learned a major lesson this weekend. Always remember the camera and always make sure the camera has a charged battery. In order to be a good blogger, I feel like pictures (if available) are necessary to make blogs more interesting but when you forget your camera or your camera doesn't have any batteries then it makes for a pretty boring blog. So, I apologize in advance of this post...
Friday night was pretty uneventful. I made the Pioneer Woman's Cowboy Calzones (from her cookbook) for dinner using leftover
pizza crust that I put in the freezer. After dinner, we headed out to run some errands. We needed to run to Target and I desperately needed to find something to wear to a wedding on Saturday. Thank goodness Kohls is open until 11:00 p.m. because I found a great dress and a pair of shoes for less than the original price of the dress!!
On Saturday morning, we got up at our leisure (such a nice feeling) and I got ready for a baby shower and Brandon had to run to a job site. The baby shower was fun! This is my friend's second baby so we did more of a "sprinkle" than a shower. We got her necessities like warm clothes (she is having another boy but her infant clothing won't work because the seasons aren't matching up) and diapers. We had a great time eating wonderful food and chatting. I meant to take my camrea to this shower, but I forgot...arrrgh (lesson #1).
After the shower, Brandon and I loaded up the dogs (we were dog-sitting for my parents) and headed to Woofstock. This time we took the camera, but low and behold the battery was dead (lesson #2). I couldn't believe how many people and dogs were at this event!! I also couldn't believe that there was hardly any barking and absolutely no dog fights. There were a lot of animal related (and some not animal related) booths set up all over the park and there were serveral different activities for animals to take part in.
We entered Koby in the small dog race. Going in, we thought he had a pretty good chance. His competition were a couple of muts and a weenie dog. Since we had Tucker with us, Brandon couldn't go inside the fence, so a volunteer had to hold Koby while I went down to the other end of the race lane. Well, Koby was a little weirded out by this volunteer so we weren't off to a very good start. Once they blew the whistle he didn't run, but instead turned around to get a glimpse of the volunteer. Then, he ran a little bit and then stopped to check out the spectators. Finally, I got him to pay attention to me and he came in fourth place, only beating the fat little weenie dog. Brandon was a little disappointed in his performance but said it is nothing a little bit of practice and training can't fix :) Ha ha!!
Both of the dogs got matching bandanas at the event and we have a picture of them posing together (I will post later because I didn't grab the memory disk before I left this morning). All in all, our first Woofstock was a success!
After Woofstock, we had a couple of hours before we had to attend a wedding. We got home and both of us took a short power nap and then we got ready for the wedding. Again, we forgot to take our camera so I don't have any pictures except this one that one of my co-workers took:
Yep, that si the back of my head, but I guess the pic shows a little bit of my dress. I think at this point I was complimenting the groom on the song he wrote
and performed for the bride (the bride is one of my coworkers)!!
Sunday was a busy day. After church I made a grocery list and we hit up the store. The rest of the day was all about laundry and cleaning house. Brandon was very helpful in accomplishing all of the chores for the day. Sometimes I forget to give him credit for helping with tasks like laundry and dusting, but I must admit, he's pretty good at those chores :) We topped off our Sunday with a yummy chicken and rice dinner (recipe below), a trip to DQ and then we picked up my parents from the airport.
All in all, we had a great weekend. And, we're ready for a Wildcat win on Thursday as the Cats play the Huskers for the last time! I would like to really stick it to them as they head out the door to the Big 10!
Chicken and Rice Casserole
Cooking Light
Ingredients
1 tablespoon olive oil
8 bone-in chicken thighs, skinned
3/4 teaspoon salt
1/4 teaspoon ground black pepper
2 cups chopped onion
1 carrot, thinly sliced
8 ounces cremini mushrooms, sliced
4 garlic cloves, minced
1 cup long-grain white rice (I used brown rice)
Cooking spray
1 cup fat-free, lower-sodium chicken broth
1/4 cup water
3 tablespoons heavy whipping cream
1/3 cup (1 1/2 ounces) grated fresh pecorino Romano cheese
Preparation
1. Preheat oven to 350°.
2. Heat oil in a skillet over medium-high heat. Sprinkle chicken with salt and pepper. Add 4 chicken thighs to pan; sauté 3 minutes on each side or until browned. Remove chicken from pan. Repeat with remaining chicken.
3. Add onion and carrot to pan; sauté 4 minutes. Add mushrooms; sauté 5 minutes. Add garlic; sauté 1 minute, stirring constantly. Add rice; sauté 1 minute. Spoon rice mixture into a 13 x 9-inch glass baking dish coated with cooking spray; stir in broth, 1/4 cup water, and cream. Arrange chicken over rice mixture; sprinkle with cheese. Bake at 350° for 45 minutes or until chicken is done (my rice was not done after baking for 45 minutes. I even added a little more liquid that what was called for).
