Easter Recipes

As I mentioned earlier this week, we made a few Weight Watchers recipes for our Easter dinner and they turned out great, so I thought I would share them here, too!

This pie was hands-down delicious!!  Not too sweet, very fresh, and a perfect dessert to top off a heavy meal.  And, even the men in attendance thought it was tasty!

Fresh Strawberry Pie

Ingredients
2 pound(s) strawberries, hulled, sliced
3/4 cup(s) sugar, granulated (I will reduce this next time)
1/2 cup(s) cranberry juice cocktail, or cranberry-strawberry juice
1/4 cup(s) cornstarch
6 oz Ready Crust 25% Less-Fat Graham Cracker Ready pie crust (I'm going to try making a crust out of reduced fat vanilla wafers the next time I make this recipe)
1 cup(s) fat-free vanilla yogurt, Greek-style
1 tsp lemon zest, finely grated

Instructions
Combine 3 cups sliced strawberries, sugar and juice in a medium saucepan.

Mash berries in pan with a potato masher; stir in cornstarch and bring mixture to a boil over medium-high heat. Reduce heat to medium-low and cook, stirring often, until very thick, about 1 minute.

Remove from heat; let cool slightly and then stir in remaining sliced strawberries. Scrape into pie crust.

Let cool slightly; cover loosely with plastic lid from pie crust. Refrigerate until set, at least 4 hours (you can then freeze the pie for a little while if desired, to make it easier to slice).  I would recommend freezing the pie as ours was a little difficult to dish up.

To serve, in a medium bowl, stir together vanilla yogurt and lemon zest until blended (I also added a little vanilla extract to boost the flavor). Spread on top of pie, leaving a border around edges so strawberry filling shows. Slice reserved strawberries and use them to garnish pie. Slice pie into 10 pieces and serve. Yields 1 piece per serving (5 points as the recipe stands).


Raspberry-Mustard Glazed Ham

Ingredients
1/2 cup(s) jam, raspberry, seedless
1/4 cup(s) Dijon Mustard, grainy-variety (with whole mustard seeds)
3/4 tsp black pepper, coarsely ground
1/2 tsp red wine vinegar, or apple cider vinegar
2 pound(s) cooked lean ham, smoked (we used a spiral ham)


Instructions
Preheat oven to 325°F. Line a small baking pan with nonstick aluminum foil or coat with cooking spray.

To make glaze, in a small bowl, stir together jam, mustard, pepper and vinegar until blended; reserve half (about 1/3 cup) to serve with ham.

Score ham with a knife by making several crisscross cuts in top of ham about 1/8-inch deep each; place ham in prepared pan and brush with some glaze. Bake for 1 hour, brushing with glaze every 15 minutes. Thinly slice ham and serve with reserved glaze. Yields about 3 1/2 ounces ham and 1 tablespoon glaze per serving (5 points).


Deviled Eggs

Ingredients
8 large egg(s)
1/4 cup(s) celery, finely chopped
1/4 cup(s) carrot(s), shredded (I omitted)
2 Tbsp scallion(s), thinly sliced
2 Tbsp fat-free sour cream (I substituted Greek yogurt)
1 Tbsp light mayonnaise
2 tsp mustard, deli-style
1 tsp apple cider vinegar (I omitted this and didn't miss the flavor)
1/4 tsp table salt
1/4 tsp black pepper, ground

Instructions
Place the eggs in a saucepan large enough to hold them in a single layer; add enough cold water to cover. Bring to a boil over medium-high heat; reduce the heat and cook at a bare simmer, 12 minutes. Rinse under cold water and, when cool enough to handle, remove the shells.

Halve the eggs lengthwise. Place 4 whole yolks in a medium bowl and discard the remaining yolks. Chop 4 of the egg white halves and add to the bowl; mash well with a fork. Add the celery, carrot, scallion, sour cream, mayonnaise, mustard, vinegar, salt, and pepper; blend with a fork.

Spoon the filling into the hollows of the remaining 12 halves of whites, mounding to fill. Place on a platter, cover with plastic, and refrigerate at least 1 hour. Serve cold. Yields 2 stuffed egg halves per serving (3 points)

 
As of this week, I've been doing WW for one whole month and have been PLEASANTLY surprised with the results.  I am about to hit my half-way mark and can't believe how easy it has been!  I'm definitely a believer now :)

Weekend Wrap-Up and a Few Phone Pics

Before I get to our weekend happenings, I thought I would share a few random phone/iPod pics with you.  I've seen this feature on other blogs (and as you know, I like to steal ideas from other bloggers) so I thought I would start sharing, too.  It's a fun way to see what we've been up to during the week.

I had a minor operation about a week and half ago and received these beautiful flowers from my siblings and I just threw them out last night as the purple flowers were starting to shed. I couldn't believe how fresh-looking the stayed all this time!  Major props for Susan's Flowers here in town!


While perusing Target this weekend, I saw this fun patio bistro set that I think belongs on our deck!  I took this pic to send to Brandon, but right after I took the pic I saw a little flyer for the set so I grabbed it instead.



Brandon was given a couple of tickets to the Shocker baseball game on Friday so we took advantage of the nice weather (and the generosity) and spent the evening at the ballpark.  It was a beautiful night and our seats weren't too bad either...


And finally, my friend from work has started making the most adorable bags ever!  I was lucky enough to receive one and I just can't get over how cute they are!  I think they are perfect for hauling stuff to work, in the car, etc. (which is how I use mine), but they could also be used as purses, gym bags, baby bags, etc. etc.



Now, for our weekend wrap-up!  I had the day off on Friday so I took advantage of my day by sleeping in, making a grocery list, running errands, meeting a friend for a pedicure, and shopping for an Easter outfit.  When Brandon got home late that afternoon we debated about running to the garden store to take advantage of the fill-a-flat sale and finally decided to go check out the selection of plants.  Well, we left with two flats of cosmos, marigolds, some cute little purple flower, and salvia (no, not the type Miley Cyrus was caught smoking). but we didn't have time to get them planted since we were heading the the baseball game so we just set them on the deck until we could get them plated on Saturday morning.  When we got home from the baseball game late on Friday, we decided we should just head to the grocery store since we'd be planting flowers on Saturday morning and heading out of town Saturday afternoon.  I think it might have been one of our quickest trips to the store!  I'm beginning to wonder if we should do late-night shopping every week...

On Saturday morning, we got up pretty early to get a head start on the planting.  However, digging 36 tiny holes took much longer than we anticipated so we didn't get all of the flowers in the ground.  Once we got one flat finished, we headed inside to shower and run a few errands before heading out of town to my parent's house for Easter.  When we got to their house, we grabbed lunch and I ran a few errands with my mom and we did some cooking, while Brandon and my dad went to my dad's office for a bit and then played golf.  That evening we watched a movie and played a game (which I won twice!) and hit the hay since we had early church the next morning. 

Easter Sunday turned out to be a beautiful day, despite the weather forcasts.  We went to church with my parents and listened to great music and a great sermon and then we enjoyed a lovely lunch with them, my aunt and uncle and their girls, another aunt, and some family friends.  We made a few Weight Watchers recipes that turned out to be DELICIOUS, so I will share those later this week.  Once we got all of the dishes put away and made a trip to our friend's natural food store to get a few things, it was time to pack up the car and head home.  We had intended to plant the remaing flowers when we returned, but it was getting cold and yucky outside so they will just have to wait.

It rained early this morning which made it soooo hard to get up for work (for me at least).  Brandon had a golf tournament today so he was up extra early checking the forcast and hoping and praying the tournament was still on for the day.  He lucked out and it was going to go on as planned. 

We hope everyone had a wonderful time celebrating the death and resurrection of Jesus!!  The resurrection story still leaves me with chills every time and reminds me to be so thankful for the sacrifice that was made on our behalf.

Weekend Wrap-Up

50 cups of cooked chicken breasts
10 cups dried cranberries
5 bunches celery
3 lbs of chopped pecans
1 gallon mayonnaise
3 cups honey
120 oz mandarin oranges
6 lbs strawberries
7 heads of lettuce
24 oz feta cheese
2 lbs candied pecans
4 bottles of raspberry vinaigrette
6 cake mixes
32 oz cream cheese
1 lb butter
1 package powdered sugar
2 coolers
2 totes
1 late night
1 long day
1 satisfying feeling

What?  You don't cook for 60 people every day?  Well if you ever want to, this would be your grocery list!

On Saturday, I successfully (with the help of my mom and a good friend) catered a luncheon for 60 women at my mom and dad's church.  My mom is in charge of the women's ministry and they were having a one day conference that included lunch.  There are not many caterers in their town, so my mom approached me a couple of months ago about possibly preparing and serving the meal and after some discussion I agreed to do it.  I thought it would be a fun experience and would help me decide if this was something I would possibly want to do in the future (and since it was so successful, the answer is mostly yes -- I might have a few restrictions, though).

So, after a lot of deliberation between my mom and me and my mom and her committee, we finally agreed on a menu:

Honey Chicken Salad
Strawberry Mandarin Salad with Raspberry Vinaigrette
Croissant
Miniature Bundt Cakes (two flavors - dark chocolate and lemon, both with cream cheese frosting)

I have made the chicken salad many times and it always gets great reviews and I knew it would be easy to assemble.  I cooked a batch of chicken in the crockpot every day for the past week, shredded it, cooled it, vacuum sealed it and froze it.  I had planned to serve the chicken salad in a tart shell, similar to the picture on the recipe, however not all things go as planned.  I had a hard time finding the tart shells in stock at the grocery store or at Sam's so I called a caterer that we use at work and she told me she could order them, which sounded great to me so I gave her the go ahead.  Well, next time I will make sure I know exactly what is being ordered before placing the order.  When I went to get the tart shells on Friday morning I realized they were not what I had pictured in my mind.  Instead, they were like itty bitty, one-bite pie shells that should be filled with pudding or custard and served for dessert.  Needless to say, I panicked!  Everything had been going so smoothly up to this point and this was something pretty huge to have go wrong.  So I called my mom, freaked her out a little bit and then we began wracking our brains for a plan B (note to self: always have a plan B!).  After tossing around the idea of making our own shells with phylo dough, we finally decided to place a wedge of cantaloupe on the plate and serve the chicken salad on the cantaloupe.  It ended up working out great and saved us quite a bit of time so I'm happy we ended up with that option.

After my last minute shopping trip, I loaded up my car and headed out of town.  Once I arrived in my home town, I began baking 70 miniature bundt cakes.  We decided on the bundt cakes because they were automatically individual servings and would look pretty on the plate.  I just used box mixes to save time and money, but I jazzed them up with cream cheese frosting - plain cream cheese with toffee topping for the chocolate and lemon cream cheese for the lemon.  While I am still on Weight Watchers, I did sample the lemon cake and I must say it was to die for!  I fell in love with lemon cake at my cousin's wedding last year where they served several different flavors of cupcakes and the lemon cupcake they had was AMAZING!  I can't say my cakes were better, but they were pretty darn close!

The night before the event, I had a lot of last minute prep work to do - make the frosting, chop and measure out the lettuce, peel and slice the cantaloupe, and slice strawberries.  Thankfully, my mom was a good sport and helped me out.  My dad, however, was not so happy when we sent him to the store at 11:00 p.m. to buy another cantaloupe :)  We finally went to bed a little after midnight, but there was just no way to avoid that last minute stuff.  I did as much as I possibly could have ahead of time to save time, but some stuff just wasn't avoidable.

 The morning of the luncheon, I still had to frost the cakes, mix up the chicken salad, assemble the lettuce salads, and plate the meal.  My good friend Ali had planned to help me but had another conflict, so my other good friend Christy was gracious enough to drive to my home town and meet me at the church to help out.  Had it not been for her, I would have killed myself trying to get everything done!  Lunch was to begin at noon and I think we filled the last beverage glass and set down the last plate at about 11:50, which was impressive!  Again, doing as much prep ahead of time saved us a lot of time.

 I heard great things about the meal and had several people ask for recipes (and even had a couple ask for business cards!!  LOL!), so I would say they were all satisfied.  I've decided that as much work as it was, it was still fun and I would still do it again in a heartbeat!  I might have a few restrictions, like the max number of people (100 might be my limit) I would be willing to serve, but overall, I had a blast.  Plus, it was fun to hang out with my mom and do something together!

And just in case you are wondering, I won't be eating chicken for a while!  After cooking it all week and smelling it in the house all week, I am a little bit turned off.  I even woke up smelling it in the middle of the night one night and just about gagged!

March To-Do List #5

Start the new Weight Watchers online program after we return from our ski trip 
and stick to it for at least one month
 
In an effort to try and eat healthy, live a healthier life, etc. etc. I have started the Weight Watchers online program.  I've been on the program for exactly one week and have really only cheated once, and that was because we were at the lake.  Otherwise, I've done extremely well sticking to my points, practicing discipline and self-control and I've even worked out a couple of times.  It helps that I have a friend at work (where it is the hardest for me to not snack, etc.) who is doing the program with me.  We have been keeping each other motivated and have made plans to walk together at least one night a week.  
I have obviously had to revamp my recipe box to get this "diet" kick-started and I thought I'd share a couple of the tips I've learned, along with a few recipes.
 
The following are the tips that have helped me revamp recipes and transform my snacking habits:
  • Use non-fat Greek yogurt in place of sour cream or mayo (used in Caesar salad recipe below)
  • Eat as many fruits and veggies as my heart desires.  Grapes really can fill the craving for chocolate if you really put your mind to it ;)
  • Portions are key! I can still have most everything I want, I just need to eat less than half of what I did in the past.  
  • Pickles, while high in sodium, are 0 points and satisfy my cravings for salty and crunchy snacks.
  • Include veggies in anything possible.  For instance, this weekend my mom made sloppy joes for lunch and I added chopped green peppers to my sandwich.  I'm also going to try adding more veggies in my marinara sauce (because I can still eat spaghetti with whole wheat noodles, I will just eat less of it).
  • Lots of recipes call for low-fat cheese, but I haven't had much luck finding it at the grocery store so I either cut waaay back on the cheese or do not add the cheese at all.  For instance, I got a sub sandwich on the road on Friday and left off the cheese to save a few points.  Now don't get me wrong, I LOVE cheese so this one is pretty hard!
Here are a few recipes that I have enjoyed over the past week:

Chicken Caesar Pitas
(5 Points)

1/4 c. non-fat plain yogurt (I used the Greek variety)
2 T. light mayo
2 T. grated Parmesan cheese
1 clove garlic, minced
2 tsp. fresh lemon juice
1/2 tsp. dijon mustard
1/4 tsp. black pepper
2 c. cooked chicken, shredded
Whole wheat pita pockets
Romain lettuce leaves

In a medium sized bowl, combine the first seven ingredients.  Add chicken and toss to coat.  Fill each pita with lettuce and one quarter of the chicken mixture. 

Veggie Dip
(4 pts for one serving - serves 12)

1 packet Lipton dry veggie soup mix
16 oz. fat free sour cream (if I make this again, I will use the non-fat Greek yogurt for a thicker, creamier dip - fat free sour cream is pretty runny)
1/2 tsp. fresh lemon juice
10 oz. chopped frozen spinach
1/4 c. shredded carrot
8 oz. water chestnuts, chopped

Combine all ingredients in a medium bowl and stir until well mixed.  Chill until ready to serve.  Serve with cut up veggies, pretzel chips or other crackers for those not on a diet.  This dip was a big hit with my family when we were all together at the lake this past weekend.

*I also added a few shakes of Worcestershire sauce to give a little extra flavor. 

Now, if only I would have been as dedicated to the rest of the March To-Do list...

Weekend Wrap-Up

This weekend was the annual Lake House Clean Up at Table Rock Lake.  As usual, we cleaned up leaves, spruced up the outside of the house, tackled a few inside projects and enjoyed each others company.  We didn't take too many pictures, but I will let the pictures we did take do the talking...

We got up extra early on Sunday to drive home so Brandon could play a double header with his baseball team, the Andover Blue Sox.  Despite the record breaking temps today, they played well and played hard and ended up splitting the games.  You can keep up with the team by clicking on the team name above. 



After a whirlwind weekend, we are going to spend the rest of the evening on the couch relaxing.  We have a busy week ahead with another busy weekend so we are going to soak up all of the downtime we can.  I will be diving head first into my first catering gig and Brandon is staying home to do yard work.  I'm sure I will have all kinds of stories from the catering event...if I make it through :)

Yes, we celebrate the opening day of MLB in our house -- it is sort of like Brandon's Valentine's Day, so I make sure to surprise him with a little something each year.  Like I said, it's the little things...

March To-Do List #2

Go Skiing with Friends!


This past week, we spent a few days in beautiful Crested Butte, Colorado skiing with our friends Christy and Corey.  We drove to GC on Saturday, stayed the night and made the final trek to Crested Butte on Sunday.  We rented a cozy condo that was nestled amongst hundreds of other condos on the mountain.  Here are a few views from our balcony...



Sunday night, we ventured into town for dinner and a little browsing.  There weren't too many shops still open by the time we got down there, but it was still fun to walk around.  The actual town of Crested Butte is very cute and quaint.  We forgot to take the camera with us, so we didn't get any pictures.

We got up early Monday morning and headed to the slope.  I was a bit nervous because I hadn't been skiing in 15 years (!), but I was ready to go...uncomfortable boots and all.

Here we are right after we got off of the first lift on the first day...I'm still standing!


The first run, a green, went pretty well.  I didn't fall and I felt like I had my feet under me.  So, we moved on to a blue.  The slopes were a little icy because it hadn't snowed in a couple of days, so they were moving rather fast.  I got a little bit nervous and a lot frustrated as the day went on.  I felt somewhat out of control and found myself snow-plowing, which KILLED my legs.  Then, I felt like I was holding up the group, so I got annoyed and frustrated with myself and by the time we made our last run before lunch, I was ready to quit!  At that point, Brandon hung back to wait on me and we stopped about midway to the mid-mountain restaurant and I just about broke down in tears.  At that point, I think Brandon was questioning my toughness and wishing he would have married someone a little more fearless and adventurous.  

Once we finally made it to our lunch stop I walked in, sat down and took off my boots.  Brandon and I then proceeded to make plans to sell my lift ticket for the next day and I would spend the day in the spa.  As we continued to rest, my attitude began to change a little and I was willing to give it another try.  Brandon and I skied the rest of the day with each other while our friends went off and did some harder runs.  I finally quit snow plowing and was actually enjoying myself a little more.

While Brandon and I were skiing together in the afternoon, he decided to take a run through a terrain park.  I skied down to the end to film him with our Flip camera and then I proceeded to erase the video because I had on my big gloves :(  I felt so bad!



We ended the day around 3:00 and made our way back to our condo where we all just pretty much crashed!!  We made dinner at home that evening and played a few games before calling it quits rather early.

The next morning, we got up and pretty much went through the same motions as the day before.  Surprisingly, I wasn't as sore as I anticipated so I was ready to go.  It had snowed quite a bit over night and was still snowing when we got to the base so we had fresh snow, which was great!  However, I was determined to ski greens all morning and after the first run of practically pulling ourselves the entire way, we decided to do blues.  Christy and I split off from the boys and did some blues which was actually pretty fun.  We would ski a little ways, take a break, ski some more, etc. etc.  We met up with the boys for an early lunch and by this time, the snow was really coming down.  It was actually almost white-out conditions, so we took an extra long lunch break and then split up into couples again after lunch.  The conditions were not getting much better so Brandon and I did a couple more runs together and then we all called it quits.  We met up at the base restaurant/bar for a refresher before heading back to the condo for the evening.




We got up super early on Wednesday to drive home because most of us had to work the next day so we wanted to get an early start to our twelve hour drive!  All in all, we had a great time and I've now decided I need to go skiing more than once every 15 years!

March To-Do List Item #1


Build a shed!!


This weekend, Brandon's parents came to town so Brandon and his dad could build a shed in our back yard.  The shed was constructed in a matter of about 14 hours over a day and a half!  They took advantage of the nice weather on Saturday and got most of the work done and then finished up Sunday.


Brandon and his dad make a pretty good team.  Brandon would take one task while Craig would do something else and together, they work pretty darn fast!

 
After lunch, Brandon's sister and brother-in-law came over.  While the guys continued to work, us girls did a little shopping and got pedicures and by the time we got back, they were getting ready to start the shingles! 

They got half of the shingles done on Saturday before calling it a day and decided to finish up the shingles and the trim on Sunday (luckily they got that far because it ended up being pretty cold on Sunday).

Once they finished up on Sunday, Brandon didn't waste any time getting the shed filled!



And of course, I have to include a picture of Koby...his idea of helping was to follow the guys around hoping one of them would want to take a break and throw his ball!


It's hard work being a dog!

We are so thankful that Brandon's parents were willing to give up their weekend to come help us (I use the term "us" very loosely)!  I know Brandon really enjoys working on projects with his dad and I think his dad really enjoys it as well.

I should add that the shed is not completely done because we still have to paint it, but we are going to wait on that part until it warms up a little more.

March To-Do List

It's only almost the middle of March and I'm just now posting my March To-Do list.  I guess I haven't been in much of a blogging mood, but that doesn't mean I can't keep up with my monthly lists (even if they are late). 
  1. Build the shed (Actually happening this weekend...)
  2. Go skiing with friends
  3. Make a plan for front flower bed
  4. Switch out winter clothes for spring clothes (I hope I don't jinx the weather) and take unworn winter items to Goodwill
  5. Start the new Weight Watchers online program after we return from our ski trip and stick to it for at least one month
Based on this list, we better get busy!!!

Laissez les bons temps rouler

That's right!  Today is Mardi Gras or Fat Tuesday and in honor of the day, I am posting a recipe for Shrimp Creole that I made last night (we have small group tonight and we're having pizza which is definitely not a Mardi Gras food) courtesy of Ella Says Opa.



Brandon was a little bit skeptical at first because he saw green peppers and shallots, but after he tasted it, I think he liked it a lot!

At first I thought it was going to taste a lot like Jambalaya, but I've got to say that the secret ingredient must be the Worcestershire sauce.  It added a different layer of flavor that was just right!

Also, last week when I was home sick I was watching good ol' Paula Deen and she was making none other than Shrimp Creole (which was the first recipe I was going to make, but then I saw the recipe below and changed my mind).  One tip she gave was to make sure not to overcook the shrimp, so I took that tip and I do believe I have been overcooking shrimp all this time!  Tonight's shrimp was so tender and so good.  So, everyone else should take Paula's advice and make sure not to overcook shrimp!


Shrimp Creole

Adapted from Ella Says Opa

1 lb. shrimp, peeled and deveined
1 Tbsp. butter
1 Tbsp. canola oil
1 small shallott, diced
1 celery rib, sliced (I didn't have celery so I had to omit it)
1/2 or 1 small green pepper, diced
4 tsp. creole seasoning, divided 1 Tbsp. tomato paste
1/4 cup dry white wine
1 cup diced tomatoes with their juice
3 cloves garlic, minced
1 cup chicken broth
1 bay leaf
2 sprigs thyme
2 tsp. hot sauce
1 Tbsp. Worcestershire sauce
cayenne, salt and pepper to taste


Melt the butter along with the canola oil over medium heat. Add the shallots, celery, and green pepper and cook a couple minutes until they begin to turn tender. Add 2 tsp. of the creole seasoning and salt. Sweat the vegetables until soft.

Add the garlic and the tomato paste, cooking off the paste until it starts to brown.  Add the wine to deglaze and reduce it down until it’s nearly evaporated. Add the tomatoes, broth, remaining Creole seasoning, bay leaf, thyme, and cayenne, salt and pepper to taste.  Bring to a boil and then reduce to a simmer. Simmer for 15 minutes.

Add the hot sauce (I left this out, but Brandon added it to his own dish), Worcestershire and re-season to taste if necessary.

Sprinkle  your shimp with salt, pepper and cayenne to taste.  Add the shrimp to the simmering liquid until just cooked through. Serve over rice (I used brown rice, but white rice is the traditional way).  I also made a batch of cornbread to eat with the meal.

Oops! Febraury To-Do List Recap

Oops!  I forgot to post my February To-Do List recap last week so here is a quick run-down:
  1. Find fabric for the curtains in our bedroom and complete item #6 on our January list (painting our bedroom).
    I looked for fabric but I did not find fabric.  This is harder than I thought.  I'm now trying to find pre-made curtains that fit my criteria...
  2. Make fun Valentines for friends and make a really yummy Valentine's dinner for two!
  3. Join a friend as we test the waters with a new business idea (more on this later).
  4. Clean out our kitchen cabinets.
  5. Commit to exercising at least 4 days per week.
    NO EXCUSES FOR NOT COMPLETING THIS ONE!
  6. Sketch out a design for built-ins in our basement.
    Again, no excuses...I just didn't do it.
I have not made my March list yet.  However, I will do that soon and get it posted!

Sick Day Redux and Weekend Wrap-Up

Yep, I'm home sick again today.  This time, though, it is what I affectionately call "The Crud" and it is not much fun.  It all started with a bit of a sore throat on Sunday evening.  I still had a sore throat Monday morning, but I was not achy so I went ahead and went to my dentist appointment (what a way to start a Monday, huh?) and then on to work.  I drank hot tea, sucked on Ricola cough drops and gargled grapefruit seed extract oil. 

By lunch time I was feeling significantly worse, but I had a lunch meeting so I went ahead and went to that and by the time I got back to the office, I was pretty much feeling like crap.  So, I decided to call the doctor because I've heard the current version of "The Crud" is nasty and doesn't go away.  The doc got me in pretty quickly, took a peek at my throat and my nose and asked me to remind him when my throat started hurting.  He said by the looks of my throat and nose "The Crud" (not his term) was definitely moving fast and he was glad I came in when I did.  So, now I'm on antibiotcs and I'm feeling sort of better today, but I didn't sleep much last night (which I know caused Brandon to not sleep well either) so I decided to stay home today, get a few doses of meds in me and take it easy.  We have a work event in Topeka tomorrow that I need to be at so I'm hoping I can get some rest today so I can be ready to go tomorrow.

Aside from "The Crud", I had a great girls weekend with my sister this past weekend.  We don't get to spend too much time together with just the two of us, so this was a special treat!  We started out on Friday night with some yummy appetizers at my house, then we headed to see The King's Speech, where we indulged in a bucket of popcorn!

Saturday we had a leisurely morning before heading to get Shellac manicures.  The weather was crummy so that was not much fun, but we made the most of it the rest of the day.  After lunch we browsed at a boutique and then met up with my aunt and cousins for lunch at Cafe Moderne.  After lunch, we did more shopping at Lucinda's and then headed to Bradley Fair to do yet some more shopping!  We stopped at Cocoa Dolce for a yummy treat, browsed through Williams Sonoma and ended up at Francesca's where we both did a little damage!  We both picked out a bunch of things, tried them on and ended up getting two items that were identical (I tried to find pics of the items we bought but couldn't find them...).  Thankfully, we live in different cities so our chances of running into each other while wearing the same outfit are slim.  We did a little more browsing the rest of the afternoon and then headed back to my house to get ready for dinner.

One thing my sister likes about my city is that we have a lot of local restaurants, so I wanted to take her somewhere really yummy for dinner.  After thinking about where to go, I knew Luciano's was the perfect spot!  It is a little out of the way, but so worth the drive!  We definitely didn't hold back for dinner and we loved every last morsel.  Needless to say, we both felt like we should do a body cleanse or fast or something after the weekend, but that is what girls weekends are for, right?!

And of course, I didn't take any pictures.  I think I might ask for a small camera for my birthday or something.  I love to have pics for the blog but hate to lug around our big camera...

Friday Five


1.  This has been such a mood lifter for our community.  In the past, it was perceived that the families were not very deserving, but this family is nothing but deserving!!
 
2.  I made homemade mac and cheese last night and did not feel the least bit guilty!!
 
3.  I love reading Reality Steve and getting the inside scoop on all things Bachelor and Bachelorette!  Just  like yesterday when he announced who the next Bachelorette will be...  I'm sure the show producers are just seething that the information gets leaked.  (I know, there are more important things going on in the world like the power struggle in Libya and the earthquake in New Zealand, and I pay attention to those things too, but sometimes, I just have to indulge my guilty pleasurs and this is one of them!)
 
4.  We had a great small group lesson this week about being salt and light in the world.  I realized that I need to incorporate this concept into my every day life a little more.  We have so many opportunities to share Jesus with other people without even getting out of our comfort zones and it is a real shame when we don't seize those opportunities.  Some areas I need to work on are not participating in gossip, not holding back my thoughts on moral/social issues that arise in conversations, and not being afraid to talk openly about what God has done in my life. 
 
5.  When I left my house for work this morning I saw a For Sale sign in my rear view mirror and for a split second thought it was in the yard of our crazy neighbors, but unfortunately, it was their neighbors' yard.  Shucks!

February To-Do List Item #3...

...Join a friend as we test the waters with a new business idea.  CHECK!




I am pleased to announce that my friend Ali and I have created a little business called Grocery Girls!  We have been trying to think of ways we could combine our talents (we are both marketing majors, we both like to cook, she sews, etc.) to make money.  We've thought of all sorts of ideas but none of them ever seemed to be just right.  Then, one day I wrote this post and that is when the light bulb went off!  Between the post and a couple of conversations Ali had with different friends, we decided we should give Grocery Girls a try!

We offer meal planning with pre-made grocery lists, personal grocery shopping and grocery delivery for people who work long hours, have kids they don't want to drag to the store, are home-bound or do not drive, dread coming up with ideas for meals, hate fighting the crowds at the store, etc.  Since I work full time, I will initially do more of the behind the scenes work and Ali will do most of the shopping and then we will both do deliveries if necessary.  If this takes off and we get a lot of customers, then I will pitch in and do some shopping in the evenings.

Belated Weekend Wrap-Up

I know I'm posting this Weekend Wrap-Up on Wednesday, but in all honesty, I haven't been in much of a mood to blog lately.  Sure we have had plenty going on, but for some reason the creative bug has momentarily left me.  But, I do have a few things on the horizon that are fun, so it will be back soon, I'm sure!

In the mean time, we did have a good weekend!  On Friday night I went to the Music Theatre for Young People to watch their performance of "All Shook Up", but more importantly to watch my friend's daughter who was in the show.  It was surprisingly fun and I was so impressed with all of the kids in the show (ranging from elementary to high school students).

Saturday morning, we got up bright and early and went to breakfast together and then took Koby for a walk.  The weather was so nice (a tad bit humid, but we didn't mind) and Koby was so happy to be out of the house!  Later that day, we had an opportunity to go to the Extreme Makover Home Edition build site here in town to watch the construction of a house they are building for a local family.  Boy, was it interesting!  Brandon, of course, was in awe of the construction.  At one point we overheard the head builder say they were seven hours ahead of schedule.  Brandon turned to me and told me that he couldn't imagine working up a construction schedule in hours.  Needless to say, it was pretty much organized chaos but they were making huge progress.  Here are a couple of pics I snapped with my phone...

Saturday night, we had Brandon's sister and her husband over for dinner.  We hadn't seen them in a while so it was nice to catch up.  I made Pasta Bravo for dinner and the best peanut butter and chocolate chip cookies for dessert.  Seriously, these cookies are to die for!

Sunday morning, we headed to church and then came home and worked around the house for most of the rest of the day.  We cleaned out the inside of our cars, did a little yard work, picked up the inside of the house, ran a few errands and then just relaxed the rest of the evening. 

I've decided as much as I love Sundays, I really hate Sunday evenings because the work week is drawing near.  Oh well, that's life I suppose!
